AnonymousInactiveMy husband and I have lamented FOR YEARS the lack of a vegetarian restaurant here in West Seattle and bemoan the fact that all the good ones are in the U District.
We’ve been to Chaco Canyon and it’s outstanding, so a thousand times YES to them opening up in the Link commercial space!

JoBParticipantA vegetarian restaurant would be a great addition to west seattle’s food scene

WSBKeymasterThe exuberant response to the call for opinions has been heartening:

Just a caveat that nothing’s final. But Link construction is moving fast (if you look closely at the photo atop that item, which I took yesterday midday, they’re already framing above street level!) so its owners are definitely in the round-up-retail-tenants mode.

BlendParticipantI used to own a Juice Bar and often think about doing it in West Seattle. I would prolly do it if I had the money. Any investors interested? hehe.
But yah..we love Chaco Canyon and drive over there often to get some great Raw food. My son and I are raw foodists and there aren’t that many places that serve raw dishes. We can take our friends who are not vegetarian and they don’t feel like they are missing out at all. Their food is great!

SueParticipantKay, I spoke with the Chaco Canyon people at the Seattle Green Festival last weekend. I told them how excited West Seattle was that they were exploring the possibility of opening here. They said that it’s still in the exploring phase, so no news (at least that they’d tell me). I think they were surprised at how much people pay attention to the WS Blog, and how something like that became news.
Do sign up for their West Seattle email list to let them know that there’s interest: http://chacocanyoncafe.com/index.php?page=203
